Preparation for the factory

Forman's smokery, situated appropriately on Fish Island in London's East End, was founded in 1905 by Lance Forman's grandfather. Only Scottish salmon is used and every stage is carried out by hand. The club visited the factory and was before viewing the processes was given a most informative introduction by Lance. What Lance doesn't know about salmon could be written on the back of a postage stamp, with room to spare! On the factory floor Darren, in the business for 25 years and who holds the world record for carving a salmon, explained the process from the time that the salmon arrives to when it leaves.
